I voted for Douce Ambience. While the solo is not terribly hard, the chord changes are deceptively difficult to play over. When you try to jam over the changes, you will gain a much greater appreciation for his solo.

I do like the melody a lot so I'm probably gonna teach that. I'm also gonna use the chords from Robin Nolan's songbook because they are probably the easiest ones to do it with.
