So, in having a study trip across US and Canada in 2 months and since I'm not able to bring my guitars, to what degree does guitar center and guitar shops in general allow you to play guitars without actually buying them?

Oh man that's cool! As far as I know there are no restrictions on what to play or how long as long as you treat the instruments respectfull. I was in a couple of stores too and trying some out while I was in the US, that was not a problem whatsoever
When i went I just played some and said that i will think and come back... But I never came back....
Except for the ones mounted high on the wall or locked up, you are free to grab whatever and start playing - no issues. Those others you need to ask for help with, and while you CAN, it might be better to not try those unless you're actually interested.

There's a sizable Guitar Center underground near Times Square (you take an escalator down to the store, below street level). They have a lot there. I spent some time there this last visit. You'll enjoy it!
Most of the best historical guitar shops, like Manny's New York, etc, are long gone.
When I went to visit the rock and roll hall of fame a few years ago I told my parents we have to find a guitar Center and we did, I just went to look and play a bit and I ended up leaving with a crimson red Schecter demon 6 
Where in Canada? We dont have guitar center. You want long and mcquades there.
I'm the most annoying person on this planet when I'm on a music store. I try the guitars for alooooooooong time. Then I always ask the dudes to let me play drums. They let me play usually. X) I love drums. After that I go try the keyboards and pianos and I try all the diferent sounds and then if the store has basses I play in them too.
